Brussels sprouts Frittata
I made this frittata the other day and
it was delicious
as well as healthy option.
1/4 medium-size yellow onion,
¼ sliced fresh bell pepper (I use 2 colors)
1/2 sliced fresh tomato
8 shredded Brussels sprouts
2 tablespoon olive oil
6 egg whites
1/2 cup Cheddar cheese, shredded
Salt and pepper
Chopped fresh cilantro
1. Saute onion and bell pepper in
hot oil in a nonstick skillet over medium-high heat 10 minutes or until tender.
Add Brussels sprouts and saute 5-10 minutes.
2. Add egg white into skillet with Brussels
3. Add tomatoes.
4. Cook until egg is set.
5. Sprinkle with Cheddar
6. Garnish with salt, pepper and cilantro
