I cant believe that thanksgiving weekend is over. four happy relaxing days were gone and were are back in to working mode. My favorite part is shopping ,shopping and good foods. we are all in that food coma after thanksgiving weekend right? I really love this holiday spirit and I’m really thankful for everything in my life. For this thanksgiving I made this apple banana cake with the remaining apples we got from our apple picking trip. I was delicious and super moist. It was pretty simple and here is the recipe.
Ingredients
3 medium size apples
3 bananas
2tsp lemon juice (to keep apples from browning)
1/2 cup brown sugar
1/4 cup maple syrup
2 eggs
2 cups flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp vanilla
2 tsp cinnamon
sliced almond or pecans for topping
Method
peel the skin off and slice apple in to small pieces and add lemon juice. this will prevent them from browning.
in a bowl add bananas and mash them with a fork.
add eggs and mix together
add sugar,maple syrup and mix again.
add baking soda and baking powder to the flour and slowly add them to the mixture and start mixing.
finally add vanilla, cinnamon and blend for about a minute.
add apples and mix all together.
pour the mixture to a 9*9 baking pan and sprinkle up sliced almonds and pecans.
bake 350 degrees for 40 min.
