Who says pumpkins are for fall? For me, pumpkin treats are my favorites. Pumpkin cake, pumpkin pancakes, pumpkin french toast, pumpkin scones ugh I love them all at any time. It’s all year round treat for me. I made this pumpkin scones the other day, so I can relax with tea, pumpkin scones, and Netflix you know.

2 cups flour
2 tsp baking powder
1/4 tsp baking soda
1 tsp ground cinnamon
1 tsp pumpkin spices
1/2 cup butter
1/2 cup pumpkin puree
3 tsp milk
1 large egg
2 tsp vanilla
1/4 cup sugar
for glaze
1 cup powdered sugar
2 tsp milk
for pumpkin glaze
3/4 cup powdered sugar
1 tsp pumpkin puree
1/4 tsp ground cinnamon
2 tsp milk
Mix dry ingredients together and add wet ingredients to the mixture. Mix them all together until all of them are well combined.
Line a parchment paper on a baking sheet.
Spread the mixture into a square shape and cut into eight triangles, about 1/2 to 1 inch thick.
Bake 425 degrees for 13-15 min.
To make the glaze whisk all the ingredients together. If the glaze is too thick, add more milk.
After cooling the scones spread the glaze on the top and drizzle the pumpkin glaze on the top.

I made this cake the other day for my moms birthday and you have to believe me this cake is everything. Since the Valentines day is coming up I thought of sharing this recipe with you because this cake could totally be your Valentines day treat.

Healthy maple pumpkin cheesecake bars

cheesecake is not only for thanksgiving dessert. but you can make it
all year round any time. it is really tasty and the best part is it is
healthy. so here is the recipe for this.

For the cookie crust:

1/2 package of honey graham crackers

2tsp maple syrup

1/3 cup apple sauce (or 5 tsp melted butter)

For the maple pumpkin filling:

1cup cream cheese

1can pumpkin puree

1/2 cup maple syrup

½ cup apple sauce (or 1 egg)

1 tsp vanilla extract

1tsp pumpkin spices

1 cups half and half

Preheat oven to 325 degrees.

a food processor or blender mix cookies and add maple syrup, apple
sauce and mix together until you have fine crumbs. If the mixture is too
dry, add in a tsp.
of apple sauce until the right consistency is achieved. I use my blender
and it
did a pretty good job.

Pour the crumbs into the baking pan and press it into the
pan and bake for 10 minutes.

While crust is baking, combine all filling ingredients in
the food processor or blender. Process until smooth. If you use a blender don’t
pour everything at once. I add one ingredient at a time and blend.

Pour mixture onto the pre-baked crust

Bake for 30-35 minutes, or until filling is set in the

Remove from oven and set aside to cool.

Cool 1 hour. Cover and chill
at least 4 hours.

Slightly adapted from here

Most of the recipes I saw they use evaporated milk but since
I didn’t have evaporated milk with me, I did some research on Google whether I
can use ½ and ½ instead of evaporated milk. It says that I can use ½ and ½
and the recipe turned out no difference.
